Happy Sunday! How was your week? I worked a lot, it was cold and snowy, and I mostly remember it as a blur. We wrapped up the inspection and remedy process, though, so this week has potential to be slightly less insane.
Snacks are not included below because I don’t feel like keeping track of every thing that goes in my mouth. That said, this week, they included a lot of beans, a spoonful of peanut butter, cottage cheese, bananas, cereal, and Greek yogurt with honey.
Let’s dive right in.
Sunday
I ran a few errands on Sunday morning, and when I got home, I gave banana pancakes another shot. And I totally nailed them – it was a perfect brunch.
We hung out on the couch watching Parks and Rec for the early afternoon, and then met our families for an early dinner at Marcella’s.
We ordered veal meatballs as appetizers for everyone to share. I had some bread and meatball, Jack and I split a Caesar salad, and I got spaghetti and another meatball for dinner. But I wasn’t all that hungry and ended up bringing home almost half of it.
Monday
I had Greek yogurt with honey and peanut butter and a banana. Jack went to the house for our well and septic inspection, and I stayed home and had most of the leftover pasta for lunch.
Over the weekend, I made lasagna for a friend who just had surgery, and we were jealous (of the lasagna, not the surgery), so I pulled a few pieces out of the freezer to have for dinner on Monday.
I also made this Caesar dressing and some Parmesan crisps in an effort to approximate Marcella’s Caesar salad. It was pretty great.
Tuesday
My breakfast was the same as Monday: yogurt, honey, peanut butter, and banana.
And since we didn’t have any leftovers, we ordered takeout for lunch.
We each got a little salad with awesome ginger dressing and a sushi and sashimi combo order from Sushiko, and it was excellent.
I had a late meeting and hadn’t worked out yet, so Jack took over dinner. We had Trader Joe’s Rosemary Balsamic Steak Tips with mashed potatoes, asparagus, and another Caesar salad – this time with spinach and baby kale – to use up the dressing.
The steak tips were better than we expected, and the glaze was great on the mashed potatoes.
Wednesday
Jack made 5 pounds of mashed potatoes instead of our usual 2, so we had an abundance of leftovers.
He made sausage, potato cakes, and an egg for breakfast, and it was really good.
Lunch was a mix of what we had left in the fridge: mashed potatoes, asparagus, cottage cheese, and a tiny bit of pasta.
Dinner was way better. I made these Cheddar Cheeseburger Sliders, roasted broccoli, and fries. Even though the fries ended up a little crispy, it was great.
Thursday
I took a stab at potato cakes and an egg for breakfast on Thursday.
And then we had a crazy day. I reheated broccoli and sliders for lunch, and threw together Sesame Chicken for dinner. It was really good, but a little spicy, which is not something I say often.
Friday
I had Greek yogurt with honey and a slice of cinnamon-sugar toast for breakfast. I was making toast for Jack and suddenly remembered cinnamon-sugar toast and obviously needed it immediately.
We had leftover Sesame Chicken for lunch, and Five Guys for dinner. I got my usual Little Bacon Cheeseburger with ketchup, mustard, pickles, and lettuce. I also wanted ice cream, and Five Guys has milkshakes, so I opted for one of those.
Saturday
I took the dogs to Highbanks Metro Park for a little over an hour. It wasn’t as cold as it has been lately and we’re about to get more snow, so I thought it would be good to get them out for a nice long time.
And when I came back, Jack made me a breakfast quesadilla with sausage, eggs, potatoes, and cheese, which was awesome.
And then neither of us were very hungry or felt like eating anything particular, but we eventually ended up ordering from Jimmy John’s. I had the Country Club, and we split chips.
