Happy Sunday! How was your week? It was an emotional roller coaster around these parts, and also ridiculously cold for most of the week, which means I was mostly cooped up inside at the computer.
Snacks are not included below because I don’t feel like keeping track of every thing that goes in my mouth. That said, this week, they included a lot of beans, a spoonful of peanut butter, pears, bananas, cereal, and Greek yogurt with honey.
Let’s dive right in.
Sunday
I skipped our usual pup playdate again because we my mom had a cold. We caught up and finalized wedding invitations over FaceTime.
And then it was time for cinnamon rolls. These are excellent. I slightly overcooked them, but they were still great.
I napped for most of the early afternoon till it was time to go to our house showing.
The house was posted on realtor.com last Saturday with only one picture, but it was a great amount of land in a great location and very well-priced, so it was easy enough to go look at it.
It was nothing like what we expected. It was actually pretty awesome, aside from the fact that it had no appliances except a crappy dishwasher. It had a cool barn, big bedrooms, and a lot of natural light.
Our realtor talked to the selling agent, who said all the offers he had for the house were either under asking price or contingent on the sale of the buyers’ home. So, we put in an offer over asking price.
When we got home, signed all the paperwork, and were feeling pretty good about ourselves, I did not feel like making the soup I had planned. So we ordered pizza with pepperoni and banana peppers and garlic cheesy bread.
Monday
I had another cinnamon roll for breakfast, with the intention of having Greek yogurt after, but got wrapped up in work, preparing lunch, and talking with our realtor.
She felt really good about our offer, but we didn’t hear back by noon, when our offer expired. So, we made a better offer and not-so-patiently waited to hear back after 6pm.
We were planning to go to dinner with Jack’s dad that night. I made Spicy Peanut Soup with Sweet Potato and Kale in the morning so we’d have homemade lunch. I added chicken thighs cooked in coconut oil and turmeric and served naan on the side, and it was awesome.
Then, for dinner, I had cedar plank salmon, broccoli, and mashed sweet potatoes at O’Charleys. It was pretty good, but I was so anxious to hear back about our offer, I don’t remember it that well.
Our realtor tried to get in touch with the selling agent several times, and never heard back.
Tuesday
For breakfast, I had a cinnamon roll with a side of Greek yogurt and honey. We had leftover sweet potato soup and naan for lunch.
At some point, the house flipped to contingent on realtor.com, and we gave up thinking we might get it. Never heard back from the selling agent.
My mom was carefully monitoring realtor.com for us, and she sent me another great house about an hour after it was posted. We talked to our realtor and scheduled an appointment to see it for 15 minutes after work.
That 15 minutes turned into about 5 because there was a showing right after ours and the exact same street address is a couple miles down the road, so our GPS initially took us there. We ran around the house, checking that it was as great as the pictures made it out to be. It seemed like it was, so we opted to put in an offer.
And then we came home and resumed working since we both had crazy weeks. Fortunately, we had leftover Mediterranean Turkey Burgers from Saturday. I paired those with a salad of spinach, baby kale, tomatoes, celery, carrots, Parmesan, and balsamic vinaigrette.
Wednesday
I had Greek yogurt with honey, bananas, and a little Life cereal for breakfast.
Jack made big salads with crumbled Mediterranean Turkey Burgers, toasted naan, spinach, baby kale, carrots, tomatoes, and leftover artichoke-red pepper-feta spread as dressing for lunch. I was in meetings over lunch, so I ate mine over the course of about two hours, but it was absolutely delicious.
On Monday, we were anxious about the house we’d offered on all day, because we felt like we had a shot at getting it.
Neither of us thought we were going to get the house we offered on Tuesday. Much like Monday, 6pm came and went with no word. A little after 6, our realtor told us the selling agent was waiting for one more offer, and she was trying to convince him not to, since he’d set 6pm as a deadline.
I realized at the last minute that Jack had used up all the turkey burgers on lunch, so I actually needed to cook dinner. We decided on these beef enchiladas. I added some of the turkey taco meat from last week and used extra cheese and regular flour tortillas.
As I was working on those, our agent called and asked if we could push the closing date out a month and a half. That worked out even better for us than closing in one month. So, she talked to the selling agent, and called us back a few minutes later to let us know our offer had been accepted.
We celebrated with enchiladas and wine.
Thursday
I had Greek yogurt and honey, plus a banana with peanut butter, for breakfast.
In between meetings, we called different lenders and got really excited about the house.
Lunch was leftover enchiladas, which were possibly even better when reheated. After a late night of work and collecting all the documents we need for the loan, we opted for Chipotle for dinner. I got a bowl with white rice, black beans, fajita vegetables, chicken, tomatoes, and cheese, plus chips and guacamole.
Friday
Once again, I had Greek yogurt with honey and a banana for breakfast.
No leftovers meant we ordered Jimmy John’s for lunch. I got the Country Club with lettuce, cucumber, tomato, spicy mustard, spicy peppers, and pickles, and Jack shared some of his chips with me.
I worked lated, so Jack put dinner together. We had Pesto Salmon with Lemon Thyme Potatoes. He also made broccoli, but I had already eaten that by the time I thought to take a picture.
Saturday
Our house inspection was at 10am, so we grabbed breakfast on the way. We each got a Breakfast Baconator with breakfast potatoes from Wendy’s, and it was hearty enough to hold us over till we got pizza for dinner.
Today, we’re planning to make lasagna for a friend who had surgery recently, chill with the dogs, and go to dinner with our parents and my great-uncle.
