Happy Sunday! How was your week? On the nights I wasn’t still working at 9, I was asleep by then. It was also ridiculously cold here for most of the week, which only exacerbated my already-strong desire to go to the beach. Now, it’s super snowy and I’m putting off taking the dogs for a walk.
Snacks are not included below because I don’t feel like keeping track of every thing that goes in my mouth. That said, this week, they included a lot of beans, cottage cheese, toast, a spoonful of peanut butter, a few squares of chocolate, Greek yogurt with honey, and Ben & Jerry’s Half-Baked Jack surprised me with.
Let’s dive right in.
Sunday
I skipped pup playtime at my parents’ since we needed to leave in good time to see the first house. By the time I walked the dogs and got ready, I was starving and also very short on time. I ate a cinnamon roll in the car on the way to our showing.
I realized that even mediocre cinnamon rolls are the ideal breakfast pastry. Doughnuts and Danishes are too light and fluffy to be filling, but cinnamon rolls are dense and actually hold you over for a bit. Which was very good, since we had several hours before we would eat again.
The first house would have been nice if it had been well-maintained, but it required some serious updates and it was pricy enough that we didn’t have a hard time passing on it.
The second house was incredible. A great price, beautiful land (complete with creek, pond, and plenty of room for gardening), and a lovely interior. But it’s one detriment couldn’t be remedied: it’s far from our parents, my work, and even the nearest grocery store. Deciding to pass on this one was hard.
When we got home, disappointed, we were both starving.
We shared a cheese board for a late lunch. It included Saltines, red pepper crackers from Trader Joe’s, thin pretzels, salami, brie, white and yellow cheddar, goat cheese, (I think) taleggio, fig spread, and horseradish/blue cheese/honey spread.
And for an easy dinner, Chipotle.
I had a salad with rice, black beans, fajita veggies, chicken, tomatoes, and cheese. We shared a lot of chips and guac.
Monday
I had Fage 2% greek yogurt mixed with honey, bananas, blueberries, and Honey Bunches of Oats for breakfast.
Jack had an errand to run around lunchtime, and we had no leftovers, so he brought us Chick-Fil-A.
I requested a spicy chicken sandwich + fries.
For dinner, we had this Damn Good Vegan Lentil Soup, but I made it un-vegan. I used the same spices in the soup to season some chicken thighs, chopped those up, and tossed them in. I also made this Miracle No-Knead Bread and spread it with salted Kerrygold butter. Jack informed me that the bread was cheating, since it’s no-knead, but couldn’t deny it’s freaking amazing.
Tuesday
I had cottage cheese with blueberries and cereal for breakfast.
Lunch was leftover soup with Parmesan cheese and buttered bread.
And so was dinner.
Wednesday
I combined greek yogurt with honey and bananas for breakfast and followed it up with a spoonful of peanut butter.
We were getting low on soup and were totally out of bread, so Jack improvised for lunch.
He prepared small bowls of soup, toasted and buttered a piece of sourdough sandwich bread for dipping, and made a salad with romaine, spinach, baby kale, tomatoes, carrots, celery, and balsamic dressing.
And then I worked pretty late, so Jack took over dinner. We received baby broccoli in our Imperfect Foods box last week, so he found a recipe for that, and then thawed some shredded pork we froze last week and mixed it with some mac and cheese. It looks like a mess, but it was delicious.
Thursday
I ate cottage cheese and a banana for a quick first breakfast, and later had a sweet potato with peanut butter.
Lunch was similar to Wednesday night’s dinner, but included a salad of romaine, baby kale, spinach, avocado, tomato, and celery in place of baby broccoli.
Aaand I worked late again, so instead of making the turkey burgers we had planned, I improvised some ground turkey tacos using the spice mix here, sautéed peppers and onions, homemade guac, and a spicy Tillamook cheese blend we received in our Imperfect Foods box. Turkey is drier than beef, and they were nothing special, but they were fine.
Friday
Pretty much like last week, I was slammed from 7:30am to about 6:30 pm, so my meals were random till dinner. I had no idea what I wanted for breakfast, so I had a little cottage cheese with a banana. After an hour and a half of meetings, I spread salty Kerrygold butter on a piece of another loaf of Miracle No-Knead Bread Jack made.
For lunch, I made turkey taco salads with the peppers and onions, tomatoes, cheese, romaine, baby kale, spinach, carrots, celery, Tabasco, and crushed tortilla chips.
I walked the dogs after I wrapped up at work, and Jack picked up Five Guys.
I had a Little Bacon Cheeseburger with ketchup, mustard, pickles, and lettuce. We split fries. I was asleep an hour after we finished eating. It was awesome.
Saturday
When I got back from grocery shopping, Jack asked if I could make banana pancakes. Neither of us had ever made banana pancakes, but I gave it a shot.
I combined this recipe with our usual pancake recipe, which is a variant on these. It worked well flavor-wise, but I’ll add a little more flour next time to make them sturdier.
For dinner, we tag-teamed our favorite Mediterranean Turkey Burgers and asparagus. I chopped everything up, and Jack cooked. Per usual, we doubled the burger recipe so we’ll have extras this week.
I started making cinnamon rolls for Sunday morning, started designing wedding invitations and our wedding website, bought the guys ties for the wedding, and gave myself a manicure before attempting to sleep.
I did a terrible job of sleeping, so I kind of hope I manage a nap later. And now I’m off to do a little yoga and take the dogs for a snowy walk before I finalize invitations and we go see a house.
