Happy Sunday! How was your week? I had another very busy workweek. Four day weeks sound great till you realize you end up cramming 5 days’ worth of work into four. And this morning we’re going to look at a couple more houses. Like I said, we’re not remotely desperate to move, but we’re definitely on the lookout.
Snacks are not included below because I don’t feel like keeping track of every thing that goes in my mouth. That said, this week, they included a lot of beans, apples, cottage cheese, toast, a spoonful of peanut butter, a few squares of chocolate, and Greek yogurt with honey.
Let’s dive right in.
Sunday
I took the dogs to my parents’ for playtime early on Sunday, and when I got home we made Breakfast Crunchwraps. This is the recipe I originally used, but at this point, I just shred some cheese, cook up bacon, eggs, and sausage, and put it all in a big tortilla. I was feeling lazy and didn’t make hash browns to throw in them, but I made extra bacon and sausage.
They don’t look like much, but with some hot sauce, they’re one of our favorite savory weekend breakfasts.
We watched a gross horror movie mid-afternoon while eating popcorn covered in butter oil, and weren’t really hungry for dinner till almost 8. Jack cooked up tomato soup and grilled cheese while I did the physical therapy I’d been neglecting all day.
Monday
I had Monday off work, and my mom and I spent a bit of the afternoon talking through wedding logistics at Jack’s dad’s house.
Before I left, I had Fage 2% greek yogurt mixed with honey.
And after I got back and walked the dogs, it was about 3pm, so I put together a snack plate with a Honeycrisp apple, honey goat cheese, salami, white cheddar, cheddar, and Saltines.
Before I left in the morning, I put this Maple Chipotle Pork in the slow cooker. I shredded it up around dinnertime, and we ate it with roasted Brussels sprouts and macaroni & cheese.
Tuesday
I had a random breakfast of a couple hardboiled eggs, some cottage cheese, and a banana with peanut butter.
Since I was in meetings most of the day, Jack made pork and cheese melts on sourdough with leftover Brussels sprouts for lunch. They were excellent.
Somehow, over the last few weeks I have consistently forgotten that we have a million peppers in the fridge and continued to buy peppers, so for dinner I cooked up a bunch of those and an onion with seasoned salt and lemon, made some guac, and used leftover pork to make fajitas.
Wednesday
For breakfast, I combined greek yogurt with honey and bananas.
For lunch, we had fajita salads, with pork, salsa, peppers and onions, guac, tomatoes, lettuce, spinach, arugula, cheddar, and crushed tortilla chips.
And then I worked pretty late and didn’t have enough broth to make ramen, so we got takeout for dinner. I got grilled teriyaki chicken with vegetables and a lot of rice.
Thursday
I ate cottage cheese and a banana for a quick first breakfast, and later had a sweet potato with peanut butter. Lunch was the leftover half of my dinner form Wednesday night.
Aaand I worked late again and Jack plays virtual games with his friends on Thursday evenings, so we ordered in. I got a couple massive chicken tenders covered in buffalo sauce, and we shared cheese fries and potato skins.
Friday
I was slammed from 7:30am to about 6:30 pm, so my meals were random till dinner. I had no idea what I wanted for breakfast, so I had a little cottage cheese with a banana, and then scraped a peanut butter jar clean out of a combination of hunger and wanting to give the nearly-empty jar to the dogs. Jack was gone most of the day on Friday for Army stuff and I wanted to keep them occupied.
I heated up a sweet potato and some pork around lunchtime, covered it in barbecue sauce, and scarfed it down in about five minutes.
When Jack got home, I made ramen for dinner.
I used the same recipe as two weeks ago, but actually used shredded pork instead of cooking up chicken. As always, it was really good. I stupidly used the wrong side of the salt shaker and dumped about a quarter cup of salt into the shiitakes as I sautéed them, though. While I scraped most of it out, the mushrooms were still pretty salty.
Saturday
When I got back from grocery shopping, Jack asked if I could make cinnamon rolls. He received the first COVID-19 vaccination on Friday and was feeling pretty headachy and blah, and for some reason the only thing he wanted were cinnamon rolls.
Well, I make excellent cinnamon rolls, but they require warning. So, he went to the grocery store to get their bakery cinnamon rolls while I put away the rest of the groceries.
He didn’t know which icing was better, so he got cream cheese and…. whatever non-cream cheese cinnamon roll icing is. I’m a sucker for cream cheese, so I loosely prefer that, but both were pretty good.
But I need to make cinnamon rolls soon because those are better.
We hung out on the couch most of the day, and started to get hungry at about 4pm. Which made perfect sense because all I’d had to eat was a cinnamon roll and a half.
I made this Spicy Italian Sausage and Peppers Pasta. This recipe never fails to impress us with how flavorful it is, despite how quickly it comes together. I added a pound of baby Bella mushrooms. This definitely threw off the sauce-to-pasta ratio, but was an excellent decision taste-wise. So now we have some extra sauce in the freezer for the next time we make pasta.
I finished off the bottle of wine I used to make the pasta sauce while we watched Pieces of a Woman on Netflix. The movie had fine acting, but it was slow and I’m still unclear on the point.
Then, I crashed in pretty good time since we have a busy morning. And now I’m off to take the dogs on a long, cold walk and do some cleaning before we go see a couple houses.
