Happy Sunday! How was your week? I had a crazy workweek and it’s been a weird weekend, but for different reasons than last week. With all the protests going on this weekend into next week, Jack has to be ready to leave, should he get activated. We drove up to Cleveland for my cousin’s birthday yesterday and brought half the contents of the Army closet and a backup plan for getting me home with us.
For many reasons, we’re glad not to have needed the preparation (at least, not yet). But let’s talk about what we ate this week.
Snacks are not included below because I don’t feel like keeping track of every thing that goes in my mouth. That said, this week, they included a lot of beans, apples, grapes, toast, a spoonful of peanut butter, a few squares of chocolate, and Greek yogurt with honey.
Let’s dive right in.
Sunday
I had Life cereal with oat milk before I took the dogs to a nearby metro park for a long walk. I walked with them for an hour or so while listening to Maybe in Another Life, which was fine but not the best book I’ve read/listened to recently.
When we got home, it was time to start getting ready to go see our first house. We were both very stressed and excited. And we loved it. It was not what we were looking for. The property didn’t have woods and the upstairs of the house was a little cramped, with no basement to make up for it, but it had stables, a beautiful patio and deck, great views, gardens, an orchard, and a really nice downstairs.
By the time we were done walking the land and driving around the town nearest the house, it was nearly 3pm and we were both starving. I talked through the house and our thoughts with my parents while Jack made grilled cheese and tomato soup, and then our realtor called with some answers to questions we’d asked.
We put in an offer that was lower than asking price but had all the flexibility the couple wanted around closing, since we are in no hurry to move, and then tried to squeeze some relaxing into the evening.
Neither of us got really hungry again, but I put ingredients for buffalo chicken chili in the slow cooker before we left to see the house, so we each had a small bowl of that for dinner.
Monday
I had Fage 2% Greek yogurt mixed with honey and Honey Bunches of Oats for breakfast.
We gave the sellers until 5pm Monday to consider our offer, but found out around start of business that they were planning to decide soon. After spending the better part of two days daydreaming about the house, we increased our offer, but figured it still wouldn’t be quite enough.
It wasn’t, though the flexibility we offered kept us competitive. We were sad. But it’s early in the search process, and those bedrooms were really small.
We had leftover buffalo chicken chili with blue cheese, cilantro, lime juice, and crushed tortilla chips for lunch.
And also for dinner, with some chips and guacamole Jack made while I walked the dogs.
Tuesday
I had hardboiled eggs, a leftover half an avocado, and a buttered sweet potato for breakfast. And the last of the buffalo chicken chili with toppings for lunch.
For dinner, I made these Sweet Potato Chorizo Tacos with Black Beans. Except I had a hard time finding chorizo at the store, so I made this homemade version. Jack told me about a hundred times how delicious the chorizo was, and he still has no idea I made it myself, so I was very happy. Next time, I’d add a little more oil and cook it a little less before tossing it in with the sweet potatoes, since it got a little dry.
Wednesday
Breakfast was rather snacky. I had cottage cheese at some point, and a sweet potato and some peanut butter a little later.
For lunch, I took most of the leftover taco filling from the previous night and put it on top of arugula, spinach, chard, butter lettuce, carrots, and celery. Avocado ranch, salsa, and crushed up tortilla chips completed the salad.
We went to go see another house after work on Wednesday, and since it was about an hour away, we opted for Chipotle for dinner.
I got a salad with rice, black beans, chicken, fajita veggies, tomato salsa, cheese, and guacamole. It was huge and awesome.
Thursday
I had an early meeting on Thursday, so I just heated up the remaining taco mix and ate it out of the container before my call. My original plan was to scramble it with eggs, but I didn’t get that far. I had a hardboiled egg after my meeting was over.
Since we didn’t have leftovers to eat for lunch, we ordered Jimmy John’s. I think I got their Country Club, which has turkey, ham, and provolone. We split a bag of chips.
I made the same pork chops as last week for dinner. For sides, I roasted broccoli and made Velveeta mac & cheese, because Jack swears it’s the best. I timed it poorly, so the mac & cheese was a little dry, but it was still good.
Friday
For breakfast, I had Fage 2% Greek yogurt with honey and a too-ripe banana.
Lunchtime came very quickly, and it included leftovers from Thursday + cottage cheese.
My Friday afternoons are really busy and often involve working a little late (for a Friday, at least). Until that changes, the agreement is I don’t cook on Fridays. So, we had Five Guys.
I got a Little Bacon Cheeseburger with lettuce, ketchup, mustard, and pickles. We shared fries. It was excellent.
Saturday
Saturday was unusual in that all of our meals were from restaurants.
We used up all our bread between the grilled cheeses from last weekend and a couple pieces of toast throughout the week, so when Jack said he wanted something buttery and salty for breakfast, I told him to get ready really fast and we could get something on our way to Cleveland. This was great motivation, so we stopped at Wendy’s. I got their Bacon, Egg, and Cheese with breakfast potatoes.
It was good, but their Breakfast Baconator is way better. It’s also a heftier sandwich, and since I knew we’d be eating again in a couple hours, I didn’t want to fill up too much. But always get their breakfast potatoes. They’re excellent.
We had Chick-Fil-A nuggets, fruit salad, and kale salad for my cousin’s birthday lunch, and Graeter’s ice cream cake for dessert.
We often cook dinner on Saturdays, but we’d been talking about pizza earlier, so we ordered that. With pepperoni and banana peppers, and a side of cheesy bread. It was awesome, and I passed out in the middle of a movie at about 8:45.
And now I’m off to squeeze in a workout, take the dogs to my parents’ for a play date, and hopefully have a relaxing Sunday with Jack at home. Fingers crossed.
