Happy Sunday! How was your week? I had a crazy workweek and it’s been a weird weekend. We haven’t officially started house hunting yet, but occasionally I’ll browse realtor.com or our parents will send us houses they think we’ll like. And yesterday, I showed Jack one and he loved it, so we spent the better part of the afternoon figuring out if we can swing it – it is definitely at the upper end of our price range – and we’re going to see it today. So, I suppose we have officially started house hunting now.
Anyway, more on that as it unfolds, but I’m trying to have low expectations since the housing market is so competitive right now. Let’s talk about what we ate this week.
Snacks are not included below because I don’t feel like keeping track of every thing that goes in my mouth. That said, this week, they included a lot of beans (more on that some other time, as well), bananas, oranges, toast, a spoonful of peanut butter, a few squares of chocolate, and chips and guac.
Let’s dive right in.
Sunday
I snacked on a handful of beans early in the morning before taking the dogs to my parents’ place to play with their dog. This has become a Sunday tradition, and it thoroughly wears Ben and Willis out, so we can generally spend the rest of the day relaxing.
I was just about to tell you we made brunch when I got home, but that was on Saturday. What actually happened was Jack ran out to the store and when he came back, he had a Frosty for me. I believe it was an apology for him eating the last brownie (that I had claimed) on Saturday. Make those brownies; they’re amazing. So, I ate a banana and some peanut butter for health, and then basically had a Frosty for lunch.
We watched The Da Vinci Code while eating salty popcorn with butter-oil, and then Jack made sous vide filets with roasted potatoes and asparagus.
His dad gave us a sous vide for Christmas, and it really does make amazing steaks.
Monday
Early in the week was stupid-busy for me at work, so no pictures. I hardboiled a bunch of eggs for the week and had those + some beans for breakfast, and we had leftover steak salads for lunch. Then, I made Sheet Pan Pesto Salmon with Lemon Thyme Potatoes and roasted broccoli for dinner. This is easily one of our favorite salmon recipes, but for some reason we always thinks we messed it up at first. Turns out, lemon and thyme smell really strange when they roast together. But they taste great!
Tuesday
I had more hardboiled eggs and beans with Everything but the Bagel seasoning for breakfast. We didn’t have that much salmon left over from the night before, so we split the leftovers and supplemented with short rib chili my mom gave us for lunch. Around dinner time, I realized I had forgotten to buy limes and didn’t feel like going to the store, so we ordered chips and guac from Chipotle to go with our shrimp fajitas for dinner. I used this fajita recipe because it’s so easy and our favorite, but subbed shrimp for the chicken this time.
Wednesday
Breakfast looked like this:
We had shrimp fajita salads for lunch, with some lettuce blend I bought at the store, carrots, celery, tomatoes, all the shrimp fajita mix from Tuesday night, salsa, Tessemae’s ranch, and the other half of the avocado from my breakfast. It was excellent; the salads the day after taco-type meals are some of my favorites.
For dinner, I made these Juicy Baked Pork Chops with roasted carrots and Brussels sprouts. We had considered breaking out the sous vide for the pork chops, but neither of us had time for that, so I found a quick baked pork chop recipe, and it was really good.
Thursday
We had one more good avocado, so I opted to use it for breakfast.
Also, I had 2 full eggs, but only remembered to take the picture after I started eating.
We had leftover pork chops and veggies for lunch, and then I made chicken ramen for dinner. Jack started getting a cold and was feeling pretty bad by Thursday, so I tried to find something soup-like I had all the ingredients for, and ramen fit the bill.
(Also, he took a COVID test we had laying around from before Christmas, and the results came back negative. He is very annoyed that he’s had both a flu and a cold in the middle of a pandemic that mimics a flu and a cold in different respects. Especially since we wear masks everywhere and wash our hands all the time.)
I use this ramen recipe, and use pulled pork or chicken, depending on what we have. This time, I cooked up a bunch of chicken thighs with sesame oil, tamari, and soy sauce.
Friday
I was starting to feel sick on Friday, and peanut butter toast was all that sounded good for breakfast, so I had that.
For lunch, Jack made salads with leftover chicken from the night before, carrots, celery, some lettuce blend, banana peppers, and a lot of ranch. The salads were excellent, especially for being scraped together from not a lot of stuff in the fridge.
I had a late work night, but after I wrapped up, Jack went to go pick up Raising Cane’s chicken.
It was exactly the lack of health I wanted.
Saturday
I woke up feeling much better, so I think I’m going to avoid the cold Jack has. Send good thoughts. And then I ate some beans early (and also some mini Reese’s I had in my car while I ran errands), but my real first food of the day came in the form of grilled cheese.
We also had Cara Cara oranges and some tomatoes on the side. It was so good. Cheese is great.
Since we ordered trashy food on Friday, we opted for nicer food on Saturday night. I offered to cook, but since we’d been debating between Cane’s and Marcella’s Friday night, we decided to just split them over the weekend.
We ordered their veal meatball and burrata as appetizers, and then both got spaghetti and veal meatball for dinner. You can’t see the meatball because it’s buried under pasta.
This is one of my absolute favorite meals, but I can never finish the pasta because I prioritize the hell out of the meatball. It’s the best meatball in the world. I was very full and very happy for a long time after.
I just looked at the last time I wrote one of these, and we had Cane’s and fajitas that week, too. I’ll give you some more variety next week.
And now I’m off to take the dogs on a long, cold walk and do some cleaning before we go see a house. So weird.

Your post reminds me I need to try avocado toast again! Do you just mash avocado and then put it on the toast or do you add spices etc? Also, I’m not sure if you saw my second comment that I left earlier in the week on your previous post (2020 in Milestones), but I realised the reason that the email I sent you bounced back was because of an issue with my email account, not your email account!

I pretty much just mash avocado and add salt on top, but it’s really good with red pepper flakes if you like spice, or sesame seeds or garlic powder if you like those. It’s a pretty blank slate to play with! I did see that – good to know, thanks 🙂
