Hey hey! Happy Thinking Out Loud Thursday. How’s your week going? This is the first week in a while that I can say isn’t that busy. I’ve been doing a lot of lying on the couch and spending time in the kitchen, since my usual homework assignments are due next week instead of this week… and one of them hasn’t been assigned yet. Kind of a ninth-week lull before the last week of classes (next week) and finals (the following week). Anyway, I’ve had lots of time alone with my thoughts, so now it’s time to spill some of them to you. Thanks for the link-up, Amanda!
1.) Whatever is wrong with my hip is not cool. Walking is a little bit of a struggle, so I’m kind of limping everywhere. This makes people stop me and ask if I’m okay. I’ve learned that trying to explain an injury without knowing its cause is pretty tough and makes you seem clueless.
2.) Staying awake on a muscle relaxer on Monday was pretty tough. Since then, I seem to have acquired a resistance to the sleep-inducing effects, though. I tend to build resistance to medicines pretty quickly, but three days might be record speed.
3.) Waiting sucks. And it’s even worse when you aren’t super-busy because it feels like all you’re doing is waiting. Yes, this is extremely vague. Hopefully, the waiting will be over soon and I can clue you in.
4.) I don’t think I’ve mentioned this, but I’m a Fit University ambassador. I’ll be writing for the site at least once a month and sharing healthy food, some exercise, and mental health tips on my social media feeds.

5.) I’m loving this list and I’ve been trying to complete at least one item every day. I’m sure I have more “stuff” at my parents’ house, but cleaning up the bit at my dorm is still pretty satisfying. And maybe it’ll make the end-of-year packing process a little bit less daunting!
6.) In the past two weeks, I’ve had the same conversation about my course load with 2 different people.
I think I’ve mentioned before that I’m going to finish the “core” part of the econ major – the classes all econ majors here take – by the end of this year. That essentially means that this year is pretty intense for me academically, but that I’ll mentally be able to breathe a little bit moving forward.
The conclusion drawn at the end of both these conversations is that I’m simultaneously brilliant (because being done will feel so great) and utterly insane (because I’m intentionally making this year harder than it needs to be). Let’s just say I’m glad I’m doing it, but I still wouldn’t necessarily recommend it.
7.) I have been crazy about roasted potatoes for the last couple weeks.
And one of my favorite kitchen successes this week has been a recipe for, you guessed it, roasted potatoes. These are just standard, super-simple spuds. So while they’re totally delicious, it’s the sauce that makes them extra-special. Look out for the recipe this weekend!

Congrats on getting the opportunity to write for Fit University! My favorite condiment is BBQ sauce. I love the smoky flavor. Second is probably ketchup. I actually did what you are doing in my last year of college. I like to get everything done and then have time to relax or make those projects better. Have a great day Ellen 🙂

I’m definitely a chip away kind of person because taking on too much at once makes me feel like I’m going to lose my mind. And ketchup is hands down my favourite condiment. I often joke that I have my ketchup with a side of food because I use so much of it 😆
I’m usually a chip away kind of person, too, which means this was kind of a silly decision and I’ve been going a teeny bit crazy all year ? Haha ketchup is a winner in my book, too!
I have huge cravings for potatoes lately! Recipe can`t go in the best time. I love that sauce that called super chili. Sometimes it burns my mouth but I appreciate that.

I hope your hip feels better!! Currently I have some ugly blisters from my running. Potatoes are life!!! I bet those taste as amazing as they look!

Hope your hip feels better soon! My favorite condiment is mustard. I literally could eat it by the spoonfuls (sometimes I do 😉 )
