Hey there and happy Thinking Out Loud Thursday! It’s that time of the week where we get to spill anything on our mind – whether there’s any rhyme or reason to it or not. Not that you can’t do that any old time, but it feels a little less random when there’s a day dedicated to it. Thanks to Amanda for the link-up! Let’s get to it!
1.) Speaking of Amanda, she posts some seriously delicious recipes. Yesterday before work, I whipped up a batch of her lemon blueberry muffins.
While my pictures aren’t nearly as good as hers, the muffins taste amazing. And can we please talk about the rivers of blueberry juice? Yum. These are absolutely packed with blueberries and have a nice lemon-y tang. Make ’em!
2.) Um… does anyone else just walk around and marvel at how freaking pretty the world is? No? Just me?
Anyway, this week has been even prettier than usual because the weather is cooperating. It’s not too hot or humid or rainy; it’s just warm and sunny and nice.
Side note: I sometimes have to remind myself that cloud-watching while driving is a really bad idea. And by sometimes, I mean almost daily.
3.) It’s Restaurant Week in Columbus. This is usually a very exciting time in my life. A ton of (often fancy-ish) area restaurants draw up three- or four-course prix-fixe menus that end up giving you a big meal for cheaper than you’d typically pay there. However, this year none of the menus are really calling to me (or my parents). So, while we’d planned to go out to a Restaurant Week dinner tonight, I think we’re actually going out for tacos.
This is a-okay by me, though. I’ve never been to Los Guachos before, and it was just named by the Food Network to have one of the top five tacos in America. Seriously, I’m so excited.
4.) I couldn’t tell you when the last time I had a Dum-Dum was before yesterday, but they were sitting out at work and so I snagged my favorite flavor before I left.
I paid for it with a blue tongue, but it was worth it. Also, what exactly is “blue raspberry”? It’s one of my favorite very-artificial flavors, but why is it so much more common in junk food than regular raspberry? And how did it come about – do blue raspberries exist? Let me check…

5.) I love eggs. I can make them many ways – and make them pretty well, if I do say so myself – but having my dad make eggs for me is the nicest.

My mom ended up being out during dinner last night, so our original menu got delayed. Thanks for making me dinner, Daddy 🙂

I like corn muffins and in the fall, pumpkin. I haven’t had a dumdum in years but it would be cherry.
I do really like corn muffins (especially with barbecue haha) and it’s been too long since I’ve had one!
Muffin would have to be CHOCOLATE WITH CHOCOLATE CHIPS TOPPED WITH MORE CHOCOLATE. Ok, glad that is out with. I also LOVE eggs and eat them almost everyday for breakfast.
ALL THE CHOCOLATE. Chocolate wins everything. I totally understand 🙂
Okay, so I have to say, blue raspberry is and has always been my least favorite (so you can have any of my blue raspberry stuff 😛 ), but I had no idea it was a real-live flavor! You learn something new every day. 🙂 I don’t really like lollipops…I mean, chocolate > candy any day, IMO! And chocolate lollipops are just not the same. 😉
Do chocolate muffins count? Is that just a cupcake? I also love pumpkin.
1) Does it seem to anyone else that, instead of the days getting shorter, the light is just being taken out of the early morning and tacked onto the evening? I am definitely feeling the darkening mornings, as my sluggishness is already kicking in. 😐 But the evenings still feel as bright as ever.
2) Challenging my own presuppositions can be very good, and lead me to discover new interests, better ways of doing things and give me a different perspective. Now I just need to get more comfortable with stepping outside my comfort zone! 😛
3) Sometimes good, worthwhile things need to be cut from my schedule to give one more room to breathe in life. I have especial trouble with this, and was challenged just last night to look for those things that are sapping the life out of me and making me “too busy”. I’m always saying my schedule is so jammed, I have time for nothing, but I have to remember that, on some level, every one of those things that are taking up so much time is a choice of mine, a decision I’ve made. I can take back that decision if the costs outweigh the benefits. I just have to have the courage to do so.

Ick. I hate chocolate-flavored lollipops. And, yes, chocolate definitely wins.
Haha I think there’s a sliiiight difference. And if there isn’t, well, calling it a muffin makes it socially acceptable to eat any old time, so let’s call it a muffin 😉

Oooo! Me, me, me! I walk around marvelling at how gorgeous nature is… Sometimes it seriously takes my breath away. And right now I want to say lemon blueberry muffins are my favourite, since I’m kind of obsessed with the combo… But I’m pretty sure that chocolate chip will always have my heart. I’m glad you liked them!

Those muffins, mercy, I have a muffin + coffee addiction as is, and the berry/citrus combo gets me every.single.time. And don’t sell yourself short, you take amazing pictures. I am so jealous of your weather! It’s been ridiculously humid here … at least the sunsets are still the same! 🙂 And blue raspberry … mindblown that I’ve never questioned that before. Is there orange raspberry?? Or purple??
