This week has been much busier than I expected since I started training full-time for my summer job (working at a bank). The job itself is part-time, but they want to train you a lot before they trust you with money, I guess 😉 Anyway, it seems like a perfect day to do a little thinking out loud with Amanda. Let’s do it!
1.) The first night back home was relaxed perfection. I hung out with my parents (and dog!), ate pizza, and watched a few episodes of the new season of Orange is the New Black. And my mom made brownies.
And then I got to sleep in my own bed. Yeah, perfect.
2.) The second day back, I got to go to Trader Joe’s and Target – two of my favorite places. I found some tasty things… but I think I’ll save those for tomorrow’s favorites 😉
3.) My second dinner back home was at The Barn at Rocky Fork Creek.
It included fresh bread, goat cheese ravioli with bacon and kale, crab cake, shrimp cocktail, scallops topped with lobster meat, and apple cobbler a la mode. Can I eat like this every night?
4.) And then I went to work/training for 8 hours on Monday (and the other days). A little less exciting. But I get to see where they keep money at a bank, so that’s cool. …Right?
5.) Honestly, the hardest part of work for me is that I’m supposed to be in essentially one position for such a long time. A post that’s coming next week will more fully explain why, but let’s just say that sitting still and standing still are not my strong suits and they are really uncomfortable.
6.) Prepare for a bad picture of dinner last night, but it’s the first really home-cooked meal I’ve had since being back. It’s the first meal I’ve fully cooked in a while! I made Mexican stuffed tomatoes. And they were really tasty with some guacamole! 😀
7.) I was craving pudding when I went to the grocery store for some spinach, cauliflower, and hot dogs. I rarely leave the grocery store with only what I came for. I ended up with some Kozyshack pudding. It was a really good decision.
8.) One of my mini-goals for the summer is to read some for pleasure. I started Tina Fey’s Bossypants on the plane ride home, and I highly recommend it for an easy, funny read. If you read/enjoyed Mindy Kaling’s Is Everyone Hanging Out Without Me? (And Other Concerns) or Amy Poehler’s Yes, Please, I suspect you’ll like this. And if you haven’t read those, do.

Honestly? I have no beef with boxed brownies or cakes. They taste pretty darn good and take that much less effort to make — win, win! That actually used to be the only kind of baking I’d do back in the day before I started making recipes for the blog. Ohhhh the good old days 😆

Aw your first night home was perfect! Pizza + family + brownies= nothing better. Also- next time you make ghirardelli brownies, put them with Talenti caramel gelato. You’ll never eat them by themselves again 😉
Talenti is SO GOOD! But I’ve never had the caramel. I’ll definitely be trying that 😀
I love homemade everything — especially when it comes to baked goods, but somehow with brownies I always buy the boxed mix when I’m craving that chewy/fudgey goodness!
I like homemade, too, but sometimes convenience wins out. And with brownies… I’m not totally convinced boxed mix can be beat 😉
Ahh I have totally read all of those books– I love memoirs, especially when their written by such hilarious people! If you like those then I recommend Jim Gaffigan’s books also, he is super funny!

Totally all about those homemade brownies! That way you can still eat them hot coming out of the oven : ) Next on my reading list are Lianne Moriarty’s books. Perfect beach reads for the summer. I actually love Ghiradelli’s triple chocolate brownies from Costco! They blow most homemade brownies out of the water. Your stuffed tomatoes look delicious!
I had no idea there was a triple chocolate one! I’ve been “settling” for double chocolate. More chocolate = even better 🙂 And thank you! They were lovely and so easy. I’ll try to post a recipe with (hopefully) better pictures sometime!

I’d like to read “Speak Love”, by Annie Downs before November (I know that seems easy, but somehow, it seems to be hard for me to find time to read a book! 🙁 ). I’m considering it as a gift for my cousin, whose birthday is in November, hence the deadline. Also, my mom has a list of books recommendations for me and I’d love to find time to read one of those, as I need a good “fun” book.
I love homemade brownies! We also make the Ghirardelli brownies (with butter! 🙂 ), and actually, those are the only boxed brownies I like (the others don’t taste like chocolate to me). But I do have a special place in my heart for Ghirardelli brownies, ooey, gooey, chocolate-y, so good warm…you’re flinging a craving on me! 🙂
In other Thursday randomness, I had horrible motivation today…it’s kind of becoming a Thursday Thing. Don’t know if it’s just me, but many Thursdays, I’m just lethargic, don’t feel like doing anything, and super-tired. I’ve started calling it an Attack of the Thursdays. And another random thing: I know this is kind of embarrassing, but I finally, finally, after many different times of trying and giving up, I figured out how to wrestle my hair until a messy topknot. Pathetic, right? But I was absurdly proud of it, and didn’t touch it all day. 😛
I’m glad that doesn’t bore you… I find food pretty interesting (and incredible) 😀

Oooh I’ve never made boxed brownies with butter before – only oil. BUT butter makes everything better, so I might have to try that.
I hope your Friday was better! Sometimes I have days like that, too. They’re no fun.
