It’s been quite a while since I threw a Thinking Out Loud post at you, and there’s definitely plenty to catch up on. So, let me tell you what’s happening in my life and mind.
1.) Last Friday, I scheduled an 8:15am doctor appointment, thinking it would be nice to start my day early and be productive… and then I was done before regular stores opened, so I had to go back home and wait before I could run my errands.
2.) My favorite breakfast order is a tie between smoked salmon plates and eggs Benedict, so for dinner last weekend, I combined them and it was wonderful.
I followed this recipe for the avocado sauce instead of hollandaise! Do it.
3.) I’m currently (binge) watching One Tree Hill, which is, much like Friday Night Lights, the type of show I feel like I should have watched ten years ago. However, I didn’t and now I am, and it’s easy to watch and funny and I’m gonna keep watching till it jumps the shark.
4.) The eclipse wasn’t ever something I was all that worked up over, but I figured it would at least be something to see, you know? Well, then it was crazy cloudy on Monday and there was no way I was seeing anything other than a cloudy day. I’m a tad disappointed, nature. At least I’ll be around for the next one.
5.) I had a banner morning on Tuesday. I woke up in a panic attack (which is largely my own fault due to excessive caffeine consumption and a couple very sugary days), which put me in a bad mood to begin with. Then, I got annoyed and decided to go to a cycling class to calm down and get rid of my nervous energy.
Everything got so much better then, and I was in a lovely mood. I showered and got ready quickly and went to go meet my mom for lunch. She told me to meet her at Chipotle on Northwest Blvd, so I typed that into Waze and went.
I got there! But then I went inside, looked around, and realized I was in the wrong location. So, I called and asked where she was, and she told me she was by a grocery store. So, I put that into Waze, got there… and was at the wrong location of the grocery store.
I called her again, this time in tears because I was frustrated, half an hour late, and freaking hungry. We figured out where I was going and I started to drive there. The sky got darker and darker as I drove. Right as I pulled into the parking lot, it poured. Not just a little downpour, but rain from all directions and a ton of wind, with no sign of letting up. I was 45 minutes late and I didn’t want to make her late going back to work, so I decided to suck it up and run in. There was an umbrella involved, but it was useless and inside out in 3 seconds.
Guys. I was soaked. I had just done my hair and makeup, I looked cute, and suddenly I was in Chipotle looking like I just got out of the shower and a tad teary because, well, could it get any worse?
Well, yeah, it totally could, but I needed to overreact for a second. Anyway, the day got better after that.
6.) I have a glittery phone case that I’m completely obsessed with. Everyone who sees it has the same reaction: “I love your case! Is it one of the exploding ones?”
First, I had no idea this was a thing. Turns out, they leak rather than explode, but I’m glad that’s not my situation.
7.) The dog that never used to even jump up on the couch has now progressed to taking my usual spot on the love seat.
Good things she’s so cute.
8.) Speaking of the puppy, she was so excited when we were getting ready to take her to the park yesterday. She was dancing all around and licking me like crazy, but then I noticed a few streaks of blood on my arm… and I hadn’t done anything that would result in blood on my arm.
Um. Not good. I looked at her mouth and she seemed fine (also, she promptly licked up the blood on my arm, so that’s that), but then my mom noticed some blood on her hand. I started to investigate and noticed a big red patch on Pippa’s neck.
She has a giant bump that was oozing blood. My mom was really worried (naturally) and called the vet, and scheduled her an appointment for today. Upon further inspection, it looks like the same sort of staph infection that she had on her stomach a few months ago after we took her to the groomer. Not so coincidentally, she just went to the groomer last week. We are unpleased with the grooming situation. Obviously. And sad that our puppy is hurt/sickish.
9.) Today I’ll be heading to Chicago with my dad to pick up my new-to-me car. I got extra lucky and didn’t have to go through work trying to sell mine, since my mom wanted it back, so that makes things easy-peasy.
10.) And now I want to leave you with some of my favorite recipes + reads from the week:
- Gotta love a good stir-fry. -> Paleo Broccoli Shrimp with Zucchini Noodles
- Obsessed with this salad. -> Grilled Kale and Avocado Salad

My fiance gave me a welding shield so that I could view the eclipse. At first I thought it was super silly, but it was pretty cool to see. I just looked for a minute as it started. We had a lot of clouds as well so I saw it in between clouds. Plus it was a good excuse to take a bit of a break from office work and step outside. I just started New Girl on Netflix and am loving having a new to me show to watch.

I love New Girl!
Oh lord, lady. Well it has been quite a week for you, hasn’t it? I hope that Pippa is ok! And getting Tally (the car) will make everything better. Plus you’ll get to see Yoshi!!
Still need to see Yoshi!
Mmh, I love salmon and eggs benedict! And I have to try the avocado sauce, great idea. I will also look into blanket scarfs, I’m always cold on planes. Thanks for sharing!
The avocado sauce was awesome (as avocado tends to be)!
I’m glad that nothing is seriously wrong with your doggie, but that is sooo hard to see your doggie suffering. And it was so cool that you got Susie’s car! 🙂
Yeah, it was tough to see her not want to go for walks, but she’s back to normal now (thankfully).
Our dogs definitely get on the furniture. They are super spoilt. They never used to sleep in our bed but first Tricia did and now Chanel does too on some nights ? we’ve become those people hahaha
We never thought we’d be those people (and for a LONG time Pippa just didn’t show interest in the furniture)… but now we’re those people and she’s that dog ?
That eggs benny recipe is INCREDIBLE. Also… One Tree Hill!! I binge watched the entire series in his school. Long after everyone else had watched it but still… man I was addicted. Its soooo goooood.
Yes!! I love both so much! I’m always behind in tv trends.
