Hey hi hello! Happy Thinking Out Loud Thursday. I hope you’re having a fabulous week and doing things that make your heart happy. It’s been about a week since we’ve just chatted, so I’m going to go ahead, link up with Amanda, and catch you up on life and random thoughts a little bit.
1.) I saw Finding Dory with my mom on Friday, and it was so sweet. I’m endlessly amazed at the way Disney Pixar movies age with the audience, while still appealing to kids. It was 13 years ago that Finding Nemo was released, and not only do I still love it, but I also think Finding Dory was the perfect continuation. And I might have almost cried, which is pretty much the same as crying, because I’m usually not a full-on crier.
2.) We also went out to eat at Columbus Fish Market, which is the first restaurant that’s not Chipotle or Panera I’ve eaten at since adopting a Paleo style of eating. They were super accommodating, and my meal was completely delicious: Chilean sea bass steamed with slices of fresh ginger, broccoli, and asparagus.
3.) I spent the vast majority of the day on Saturday in the kitchen, which, as usual, made me want to do that every day. And, hey, I got some good stuff out of it. See: Double Chocolate Chip Cookies and Double Chocolate Berry Ice Cream Sandwiches.
Oh, and some really good pesto I’ll be sure to share soon.
4.) On that note, I’m pretty convinced that pesto goes with everything. I’ve had it with chicken, zucchini noodles, salmon, prosciutto-wrapped tilapia, tomatoes, and avocado. Can’t get enough.
5.) Once upon a time, my friends and I were un-busy people who could see each other every day. Now, we have to make plans three weeks ahead of time for the one hour a week we’re simultaneously free. Okay, it’s not that extreme, but it’s pretty close. When did we all get so busy? Does it ever stop?
6.) Susie informed me yesterday that adult summer camps do, in fact, exist. I found a list and I think a bunch of them sound fun! Who wants to go to camp with me sometime? 🙂
7.) My dad makes excellent, classic beef burgers. I love them a lot. And because of that I’ve never played with different meats or flavors in burgers.
Lately, I’ve seen all sorts of variations that make me want to double (or triple) my burger consumption. See: here, here, and here.
8.) I never have issues drinking water. I love water and have been drinking it like crazy for 10 years. Seriously, give me a bottle of water and I’ll probably down it in under two minutes. Right now, I’m still thirsty… but I really just want anything but water. Help?
9.) My mom and I started a cake pop puzzle after finishing the cereal box one.

But, honestly, we are not loving it. Guys, this puzzle is marketed as having completely unique pieces. No piece is the same, and therefore, they are weird. The edge pieces don’t always look like edge pieces, and they fit really roughly together, so you’re never totally certain that they’re in the right place. No bueno.

I agree about burger consumption as you know, you really can’t have enough 🙂 Love that you do puzzles with your mom! And too bad the cake pop one is annoying because that’s an awesome puzzle idea – clearly I need to up my puzzle game!

Burgers are the best 😀 And yeah, I think we’ll need to finish it because we’re stubborn and it’s an adorable idea, but it’s definitely not an easy one.
I get to see you tomorrow! And with cookies, ice cream, burgers, puzzles/games… are you sure you aren’t at camp now? I think we should round up some campers!

But I have been DIGGING putting a Tazo Passion tea bag in a 24oz water bottle to cold brew in the fridge, then adding a touch and stevia and…UGH so good!!! No more wasting $4 at Starbucks!

PESTO is so good! And your dad makes AMAZING, perfectly shaped burgers. You find the coolest puzzles. That would make me want to eat cake pops.
A summer camp sounds really fun. I might want to go… 😉 Oh yes, and flavoring water with lemons or oranges does make it a bit more craveable. 🙂
I should try adding fruit to my water! It sounds like such a simple trick, but I’ve just been too lazy 😛
I love puzzles but I always end up with ones that are SO dang hard. Maybe my next home will have a table specifically for making puzzles…
How is your paleo diet going? Are you seeing any improvements in digestion? I’d love to hear about it.
We’re using a card table for the puzzles, which doesn’t work out beautifully because it has a padded top, so the surface isn’t that hard. But we try to make it work.
Ahh funny (or not) story about Paleo: Everything was GREAT after two weeks. And then I overdid it on (Paleo) cookies this weekend. I was going to give an update today, but I think I’m going to give my digestive system another week or so to settle down before I make any official claims. My gut feeling is that Paleo helps a lot, and I still have to be careful (or just be smart) about my baked good/sugar intake, Paleo or not. But I’ll have a much lengthier assessment on the blog within the next two weeks. Feel free to email me (ellen@myuncommoneveryday.com) if you wanna chat, though!
How good was Finding Dory?! The voice actor for baby Dory was SO SO good. Cue heart melting overtime she spoke haha. Kyle and I made sure to squeeze in seeing the movie before we went to Norway since we knew we wouldn’t be able to wait two weeks to see it haha!

I cannot WAIT for you to share that pesto recipe missy! I’m a huge pesto addict. I love it on sandwiches or tossed with pasta. It’s also really good mixed in with eggs. Oh and on pizza. Ok so basically I eat it on everything :p

Yes to the friends thing! I’m best friends wth my best friend from middle school and we literally used to see each other every. single. day. We both have 2 kids similar in age so it’s so much fun to hang out but I kid you not, we literally make plans 2 weeks out at least.
We’ve definitely had to get good at planning ahead, which has never been our forte for group things. It’s so fun that you guys have kids around the same age!
I love puzzles, but the crazy ones drive me nuts. There’s nothing worse than thinking a piece does or doesn’t go somewhere and then being proven wrong down the road when you’re looking for that piece in your pile and can’t find it because it’s already in the wrong spot. At least the puzzle is cute and colourful though 🙂

I’m with ya – pesto definitely goes with everything. My favorite dish is asparagus, pesto & goat cheese stuffed chicken breasts, topped with more pesto and fresh tomato slices. SO GOOD!!

Ohmygosh, I’ve been craving a really truly BEEF burger for some time now! I wish you could send one of your dad’s through the screen…it looks delicious!
And those adult camps…man, some of them look like so much fun and so re-energizing!! Like, I’ve thought something like that would be cool for a long time, but never put together the idea that it might be manifested in an activity such as an adult summer camp. I never went to camp as a kid, so I have no idea what that’s like, but I think it would be beyond cool to try the adult version sometime!!

I’m totally in agreeance with you that pesto goes with everything.I just came back from the grocery store where i was super excited to find a store bought pesto that doesn’t have olive oil (as I can’t eat olives!) so I can have pesto-y things all the time and not just when I can be bothered to make it myself 😛
Let’s go to camp, girl! I’ve only ever been to one school camp!
