Happy Thinking Out Loud Thursday! How has your week been? We finally got our midterms back in a couple of my classes, and now there are just a few assignments left in the quarter, so I’m starting to feel like I’m in the home stretch. Quarters go by so fast. It kind of feels like I just got back from spring break… and that was eight weeks ago. Time is a tricky thing. Anyway, I’ll be spending a good chunk of today on an econometrics problem set, so wish me luck on that. And now let’s get into some of the stuff on my mind this week. Thanks for the link-up, Amanda!
1.) I loved reading your thoughts on success yesterday. As always, thank you (thank you) for taking the time to hear my thoughts and to share yours. I’m grateful for you every day.
2.) I mentioned last week that I’d get to look at classes for next quarter this week. I didn’t know at the time, though, that they were changing the online system we use to do that. The result on Monday morning was a giant mess in which no one was able to bid for classes because the appropriate button simply wasn’t there. It took about an hour for tech support to admit there was a problem, and about two hours for it to be fixed. Given that there’s a full week for bidding, it’s not that big of a deal, but the student Facebook group was pretty entertaining on Monday morning. The system has been a little glitchy for the rest of the week, so I should probably log back in and make sure I have what I want before tomorrow evening.
3.) I was possibly in pajamas by 7pm yesterday. I mean, my evening meeting got canceled and I was tired, so I decided to make the best comfiest of my unusual downtime.
4.) Everything in this post made me want to head straight to the kitchen and start baking.
Not that I don’t usually want to be in the kitchen, but wow. All those desserts look incredible.
5.) My youngest cousin graduated from preschool yesterday. He’s in the high school graduating class of 2029. That. Is. Insane.
6.) You know you have a chronic illness when the thought of new doctors excites you. Over the past couple days I made summer appointments with a holistic/integrative medicine doctor and a doctor who runs a runners’ clinic, and I’m looking forward to seeing what perspective they can provide on my situation.
7.) I’m a little bit in love with prosciutto lately. It’s nicely salty and adds so much flavor to simple meals. Love it.

8.) Including today, I only have 7 more days of classes. Craziness. Then, I have two exams and an essay to write, and I’m done with year two – and the core of the econ major. Whoa. I’ll be sure to hit you with all the thoughts that come along with that when I’m officially done. 😉

One of those things they don’t tell you about college….the #1 most stressful thing is picking classes!

I can’t wait to hear about how the holistic doctor will help you. I’m eating a mango right now and it’s pretty delicious. Yesterday I made pancakes, so I guess that’s what I’ve been cooking lately 🙂

I loovvee prosciutto! I can’t wait to see that chicken recipe. Every time I think of when my boys will graduate (2032 and 2034) it seems like a billion years from now. I graduated in ’09 which feels like a billion years ago, but it was just 7? I don’t get time.

Food obsession lately has definitely been frozen banana ice cream. I put that stuff on eeeeeverything. Or just eat my weight in it 😉 And the home stretch of school is seriously one of the best feelings ever. And then when you write your last test and hand in your last paper? Pure.bliss.
I know I’ve said it before, but I’m so looking forward to having a food processor back in my life so I can partake in your banana ice cream madness 😀

I like prosciutto too. Salty meats really serve to make regular dishes really exciting!!! 🙂 Your egg dishes always look super good. Food obsession lately? Would it be weird to say, ‘nut butter?’ I’m really loving Nuttzo and Sun Butter lately. Let us know what the doctors say about your health; I’ll be praying for it!
It’s never weird to say “nut butter”! Nut butter is the best. I just got fresh jars of Krema and Barney Butter, so I totally get it! Thanks, Emily 🙂
Right now I’m loving baked oatmeal with peanut butter melted on top! It’s been several weeks of me making it and im still not sick of it!

My school transitioned their registration system before spring semester this year, and it was an utter mess. Seriously, the school was in an uproar because everything was different or didn’t work. Thankfully I’m an English/Religious Studies double major… no one is desperately vying for those classes it seems. 😉 I’m sorry it was so frustrating for your school! Hopefully all goes well with your bidding, albeit a delayed bidding.
Uhh… to your second point… it’s 3:45 as I type this, and I’m definitely already in pajamas. Whoops. Hehe.

They do go fast, but I’m glad to have someone to commiserate with over the fact that alllll of my high school friends are at home relaxing and I’m all over here like, “I still have two and a half weeks of school left, guys!” 😛
I had no idea you were on quarters! I thought it was basically us, Northwestern, and the UC schools ? But yeah, my correspondence with my high school friends is me complaining about school and them jokingly bragging about summer 😛
I keep baking stuff when I’m supposed to be studying! Have you tried Lean, Clean Brie’s pb choc granola? I keep going on about it hahaha but it’s honestly sooo good!

Yay goodluck on finals and the final stretch of the semester! I am currently on a whopping one week break from dental school before starting summer semester, so I know how you feel! The semesters always really do seem to fly by- especially when you are super busy! Now that melons are coming into season, I have been obsessed with watermelon lately!
