These fluffy Paleo Zucchini Bread Pancakes taste just like zucchini bread that takes an hour to bake – but these come together in under 10 minutes. Who says pancakes are only for the weekend?
Approximately everything about the past four days points to one fact: I am exhausted.
The evidence
On Friday, Saturday, and Sunday, I slept till 7am. That usually happens about one day every two weeks.
I barely managed to run a super slow four miles with my dad on Saturday morning.
My plan on Saturday was to bake a bunch of sweet stuff to take into my mom’s work. However, I got all my ingredients ready and suddenly wasn’t feeling it at all. I ended up going shoe shopping and watching The Americans all evening.
When I try to fall asleep, I have panic attacks that, wait for it, prevent me from sleeping. (This happens when I’m particularly tired. It’s really convenient because it creates a nice little vicious cycle.)
Every time I go to read a blog/email/article/comment, I get distracted and don’t read it. My Feedly and inbox look ridiculous.
My throat is just slightly scratchy, like my body is trying to decide whether or not I’m going to get sick.
I’m actually craving sugar and Diet Coke like crazy, and I’ve been satisfying those cravings. My stomach hates me a little lot right now, and I care but I also do not. Water also holds no appeal, even though it’s been ridiculously hot and humid. I’ve still been forcing it on myself, don’t you worry.
I’ve sat down to write this post three times, but I haven’t been able to focus and decided to lie in bed and attempt a nap instead. (Update: finally writing it in the middle of the night while eating Sunbutter out of the jar since my mind decided to freak out instead of sleep.)
My patience is approximately zero. Like, I was majorly craving zucchini bread last week, but wasn’t willing to wait for it to bake.

The good news: these totally satisfied that craving.
The bad news: I sound like am kind of a mess.
The pancakes
Guys, these pancakes make me happy. They’re perfectly fluffy, just a little sweet, and full of warm cinnamon spiciness. I know the little green flecks turn some people off, but I think they’re pretty. Also, I grew up loving zucchini bread, so I might be biased. It’s one of two quick breads my grandma makes all the time, and I could eat it every day. It’s practically a vegetable, so why not?
But zucchini bread pancakes are just a little bit faster, and require a little less time and patience, which tired me totally lacks. So, today they win.
Don’t worry. I’ll come back with actual zucchini bread soon. Let me get some sleep first.
For now, though, let’s just pack the veggies into pancakes and dive right in.
- 1 zucchini
- 1 T. almond butter, melted
- 1 egg
- 2 T. coconut flour
- 1/8 t. baking soda
- 1 t. coconut sugar
- 1/2 t. cinnamon
- 1/2 t. vanilla extract
- 2-4 T. milk of choice
- Oil to grease pan
- Shred your zucchini* and squeeze out most of the water. You'll need 3 packed tablespoons of shredded, squeezed zucchini. Set aside.
- In a small bowl, whisk melted and cooled almond butter with the egg.
- Add coconut flour, baking soda, coconut sugar, cinnamon, vanilla, and 2 T. milk to the egg and almond butter. Stir to combine. The batter will likely be very thick.
- Add more milk 1 T. at a time until it thins a bit and stirs more easily.
- Mix the shredded zucchini into the batter.
- Head a large skillet over medium heat and grease with oil or nonstick spray.
- Pour or scoop batter (I used a 1/4 c. measure to scoop) onto skillet.
- Allow pancakes to cook for 2 to 3 minutes on first side. Bubbles will appear on top and they shouldn't be hard to flip.
- Cook about 2 more minutes on second side.
- Remove and serve. Enjoy topped with fruit, shredded coconut, chocolate chips, nut butter, and/or maple syrup. Have fun with it!
- *I shredded about 1/3 of a medium one - 65 g.

Even though I make fun pancakes for the blog, the pancakes I make every weekend are chocolate zucchini pancakes…a pancake without veggies is not a pancakes at all 😉 Hahaha!
