Hours I spent yelling on Saturday afternoon. Not angry-yelling, but I was handing out schedules and transportation passes to the first years in a crowded room where there was music playing. I went over all their mandatory meetings for the week and told them when they had to be where. It was loud in the room, so I had to be louder – and extra enthusiastic.

Registration meetings I’m scheduled to attend this week. Two were big group meetings intended to help the first years plan out their schedules, and the other 71 are one-on-one meetings where they’ll actually get their schedules for the quarter.

Classes I’m registered for now. I’m a full-time student, guys! I used to only have two classes, but you need three to have a full course load. It was seriously stressing me out. I am hoping to get into a class at the business school today, in which case I’ll drop one of my four classes in the college (you can’t take more than four), but I sat down Sunday and talked out all my (limited) options with my mom and settled on two classes I’d at least be willing to try. I’ll tell you about the final schedule when it’s, well, finalized.

Times I made these 7-ingredient Paleo Protein Buckeyes this weekend. Not because I ate the whole first batch in one night, but because I really thought I could make them prettier the second time around. I was moderately successful, but I’m the first to admit that they still look a tad… rustic.
But they’re so good that I was determined to make them at least presentable for you. And now you get buckeyes. You’re welcome.
If you’re from Ohio, at least, you grow up with buckeyes. But if you’re unfamiliar with them, they’re basically sweet balls of peanut butter dipped in chocolate just far enough to leave some peanut butter peeking out. Good stuff. (Much better than the poisonous tree nuts they resemble…)

Sunflower seed butter is not the same as peanut butter, but it’s surprisingly similar and seriously delicious. Also, I added some collagen powder to bump up the protein and used honey as my sweetener. The result? A healthier sweet, nutty, chocolatey bite that you won’t be able to resist.
- 1/2 c. sunflower seed butter*
- 2 T. honey
- 1/4 c. unsweetened almond milk
- 4 T. coconut flour
- 2 scoops collagen peptides**
- 1 t. vanilla extract
- 3 T. chocolate chips***
- Line a baking tray or plate with parchment paper and set aside.
- In a medium bowl, mix together sunflower seed butter, honey, almond milk, coconut flour, collagen peptides, and vanilla.
- If your dough is too sticky to handle, freeze for 30-40 minutes. It will be a little sticky no matter what.
- Roll dough into tablespoon-size balls and place on lined pan or plate. Freeze for 20-30 minutes.
- Melt chocolate chips in the microwave in 30 second increments or over low heat on the stove. Remove from heat.
- Dip frozen sunflower butter mixture into melted chocolate and put back on parchment. When all the buckeyes have been dipped, freeze until chocolate is set.
- Store in the fridge for one week or freezer for three (if they last that long). I love them straight out of the freezer!
- *You can use any nut or seed butter you like. Peanut butter is the classic choice, and I think sunflower seed butter tastes closest to that. You can't go wrong with nut butter and chocolate, though!
- **If you don't have collagen peptides or don't want to add them, use a little less almond milk. You want the texture of the dough to be a little soft and sticky, but definitely not runny.
- ***You might find it easier to melt more chocolate chips. I've done it with 1/4 c. and 3 T. and had some left over after the 1/4 c. time. Dipping got a little harder with just the 3 T. It depends on how pretty you want them to look!

Do you often eat on-the-go? I usually try to make mealtimes downtimes, but that’s so not how this week is shaking out. I did manage some meal prep last night to make my life easier, though!

I think it gives them a little more structure but still doesn’t dry them out. Coconut flour can lend some disgustingly dry texture (been there, done that), but here it just makes the balls light and doughy…a little fluffier than just the nut butter!
