Paleo Double Chocolate Chip Cookies come together in under 20 minutes, are soft, fudgy, and ridiculously delicious. So, you have no reason *not* to make them, right?
We’ve talked about this before, but I’m not so good with moderation. I’m a perfectionist, an all-or-nothing person, and a total type-A personality.
Give me a project and I’ll dive right in and emerge only when it’s complete and checked a minimum of three times. Hand me a style guide and I’m going to zone in and edit down to the last Oxford comma. Schedule a meeting and I’ll be five minutes early and completely thrown off when everyone else is two (or ten) minutes late.
And when I get a recipe idea, I don’t go for, “Oh, this is pretty good.” Nope. I go for, “Whoa, how did you do that? You’re a genius!”
I’m not a genius, by the way. Just a girl throwing some ingredients together and hoping for the best.
Sometimes it works out. Sometimes it doesn’t. Sometimes perfectionism is a good thing, and other times it’s excessively stressful. Live and learn, you know.
Anyway, I would be willing to bet that you’ve had some “eh” cookies in your life. Maybe they looked amazing – how bad can a cookie look, right? – but then you tried them and immediately wanted a do-over. I was talking to one of my coworkers about that the other day. Sometimes you taste a food and think that it could’ve been so good if this or that were different. Instead, you’re disappointed.

First, I misread the recipe I was adapting, so my ratios were off. And though that worked out for me in the end, it was an accident. Second, I was going for rich, fudgy, chocolatey cookies. Instead, I got pretty good cookies with a hint of cocoa taste and some chocolate chips. Edible? Totally. Good? Yes. Amazing? Hardly.
I still (of course) ate a few for good measure, but I wasn’t fully satisfied. I took a break, made dinner, went back for round two, and #nailedit.
Side note: thanks to recipe testing and my love of cookies, I ate more sugar this weekend than I probably have since going Paleo. I felt it a little, but nothing too bad. Updates on Paleo coming soon.
What took these cookies from okay to awesome? Nothing crazy – just a little melted chocolate, some cinnamon, and a teeny bit of ground coffee. The result is a soft, substantial cookie full of chocolate flavor.
So, basically perfection… which is what I was aiming for.
- 1/4 c. coconut oil, melted and cooled
- 1 large egg
- 1/2 T. vanilla extract
- 1/2 c. coconut sugar
- 1/2 c. + 2 T. almond flour
- 1/4 c. coconut flour
- 2 T. unsweetened cocoa powder
- 2 T. chocolate chips*, melted
- 1/8 t. cinnamon
- 1/4 t. finely ground coffee**
- 1/4 t. salt
- 1/2 t. baking soda
- 1/4 c. chocolate chips
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk egg, vanilla, coconut sugar, and melted coconut oil together.
- Add almond flour, coconut flour, and cocoa powder to the wet ingredients and combine.
- Stir in melted chocolate chips, cinnamon, coffee, salt, and baking soda.
- Fold in chocolate chips.
- Scoop cookie dough onto prepared baking sheet. I used a two-tablespoon cookie scoop and got 15 cookies.
- Bake for 7-9 minutes, depending on the size of your dough balls. Mine took exactly 8 minutes. They should be soft, but set on top.
- Allow to cool and enjoy!
- *I used Enjoy Life mini chocolate chips
- **I used instant coffee and ground it up with a meat tenderizer. I'm not a coffee drinker, so I don't keep a lot of coffee around.

The best cookie I’ve ever had is my mom’s oatmeal chocolate chip cookies, plain and simple. I can’t eat them anymore as I try to eat gluten-free for IBS, but I am on a mission to recreate them!

When I was growing up I always went on little coffee dates with my mum, except I got hot chocolate because my love affair with coffee took a while to bloom. Anyway, we always went to this one cafe and they had these amazing chocolate chip, m&m cookies.
They were crunchy, but soft and they weren’t stingy on the chocolate, which I appreciated.
I think they changed the recipe, or changed owners now though because they just don’t taste as good.

I think I’m still a hot chocolate/tea person over coffee, no judgment here! And those sound AMAZING. I’ve had the same experience with recipe change, where the best thing ever suddenly changed and you’re like, “Why did you do that? It was perfect!” So annoying. 😛

These look awesome, Ellen! I admittedly haven’t experimented while baking in a LONG time because it’s exhausting to be so precise with everything. I have enough of that tendency in real life that I realized I’m better off following recipes…like this one 🙂
