Hi hi hi. Happy (?) Monday! Yes, happy Monday. Let’s start the week with a positive attitude, shall we?

Okay, so that’s a little more optimistic than I feel, but that’s okay. Usually, I do relish the “fresh start” thing, but this weekend was exactly what I needed. So… let’s talk about it!
I got off work a little early on Friday, and my mom and I took advantage. We went on a very successful shopping trip for Father’s Day gifts and clothes. I was also lucky enough to go grocery shopping with my dad later. We bought Minions paper towels. It was great. 🙂
While prepping dinner (this with a fresh pineapple salsa), the lid of my salt grinder may have fallen off, causing giant rocks of salt to fall into the salsa. My mom helped me pick them out, so we salvaged it, but it was still a tad salty. Oops. Anyway, it was otherwise delicious and we finished out the night watching Orange is the New Black.
Saturday was wonderful. I hadn’t baked for months, but I had the house to myself for the day. So, after an excellent workout and a run to get a couple ingredients, I baked for most of the afternoon.
Clockwise from top left: these cookies, this bread, these cookies, and these muffins. It was fun, tasty, and really relaxing to be in the kitchen and cook and clean, and cook and clean some more. I could do that almost every day. When my dad got home, he made us a delicious breakfast-for-dinner. The savory food was tasting quite good, seeing as I had mostly eaten baked goods that day.
Also, because when do fluffy omelets and crispy bacon not taste good?
Sunday morning, we celebrated Father’s Day a bit. I walked the dog for my dad, gave him his cards (I can never choose just one…) and gift, and we hung out and watched Sunday political analysis shows because that is what we do.
(My dad is kind of the best.)
In the afternoon, we met my grandpa and aunt and her boyfriend for lunch at BJ’s Brewhouse before heading to go see Inside Out, which was really adorable and well-done.
So, my weekend was my kind of weekend – and it’s absolutely over too soon. I did things I adore, spent time with people I adore, and am heading into the (busy) week feeling nice and relaxed. It might not last, but it was lovely.

Breakfast for dinner? I am so there! Eggs are always a yes for me. However I have never had oatmeal for dinner… I am intrigued ;).
Oooh I’ve never had oatmeal for dinner. I have had giant bowls of cereal with fruit for dinner, though. Highly recommend 😉
Enjoy breakfast for dinner. In the winter it is often pancakes or waffles with sausage and some fruit. Otherwise, a scrambled egg concoction with bacon, toast, and fruit.
Pancakes for dinner is always pretty tasty, too! We almost did that 🙂
I love that you did so much baking! And I completely understand what you mean about savory foods after baking all day. After doing lots of baking and taste-testing, savory foods taste incredible after all of that sweetness!
It was so fun! And yeah, all that sweetness really makes you appreciate other flavors – and salt 🙂
Funny that you should ask about Mondays, because as I was writing a post for my blog on Monday, I was thinking about what a downer Mondays are and then I caught myself, considering the fact that maybe I should start thinking more positively about Mondays before I even start the week…and then maybe that way, it’ll help me see and be thankful for the good parts of my Monday, and generally improve my attitude towards the whole week starting with day 1. 😉 But, as a rule, I hate Mondays, because it’s the start of the midst insane part of my week.
So glad you had such a great weekend!! I love the picture of you and your dad! And thanks for your opinion on “Inside Out”…I’m the type that likes to feel out how other people are liking a movie before actually seeing it myself. 🙂
I LOVE breakfast food, so…for any meal!! I remember when we were little, all our friends thought we were weird because pancakes for us was dinner fare. But then so were eggs. 😉 Now most people I think are used to the breakfast-for-dinner idea…but why in the world hasn’t anyone started a granola-for-dinner trend??? It should be a thing!!
My weekend was cray-ZEE-busy. We worked in the yard most of Saturday, and I finished the day with a late-night babysitting job. Then Sunday was first making brunch sticky buns for my bestest daddy ( <3 ), but then it was all about getting down to the business of preparing for this crazier-than-crazy week. Pretty sure the busy-ness will get better after the Fourth, though…

Oh! And baking when the house is empty? That’s honestly one of my favorite things and really lets me relax and get in the baking zone (my happy place haha). So many treats!
