This meaty take on shakshuka is full of lean ground turkey and mushrooms, making it an ultra satisfying anytime meal that’s made in just one pan.
I think my favorite thing about Whole30 is snacking less.
I never, ever though I’d say that. I LOVE TO EAT. I LOVE SNACKS. Just thought I should yell that at you to make it clear. It’s still true, but let me explain a little more.
In my pre-Whole30 world, I made kinda satisfying, smallish meals and just figured I could supplement with snacks. I did, but I was almost always looking for more snacks. I mean, I love to eat, so why not eat all day, right?
Kind of… but it’s not really that fun being hungry all the time. It’s fun occasionally, like the day after a tougher-than-usual workout or when there are tons of cookies around that you can devour. When you’re trying to get sh*t done, though? Honestly, no.
I believe Whole30 at least used to emphasize three meals a day, with little to no snacking. Now, I still don’t do that. I’d have to eat seriously enormous meals and maybe feel a little stuffed to go from lunch to dinner and especially dinner to breakfast. However, by making my meals bigger and carb-ier and fattier, I’ve found that I can have one medium-large or two small snacks between lunch and dinner, and eat something small a while before bed, and I’m good. That might still sound like a lot of eating, and I guess it is. But it’s not constant, and I love it.
I’m putting together a post on how I think about it and structure it, so ask questions if you have them! But until then, let’s talk shakshuka.
The first time I made shakshuka, it was over the summer. I adore eggs and tomato sauce, and together they’re wonderful. I made this one and it is excellent. I did notice something, though. Unless you’re supplementing it with some bread or bacon, it feels not-quite-satisfying.
And I wanted to change that.
So I did. If I’ve learned anything from Whole30, it’s that vegetables should be added to pretty much everything. Enter: sautéed mushrooms. And then the lovely people over at Jennie-O sent me some ground turkey as part of our 2017 collaboration, so I went ahead and added it to my shakshuka. If you think ground turkey is boring or dry, it doesn’t have to be… especially if you let it soak up a rich tomato sauce.
With all that goodness, my (12-inch) pan almost overflowed.
Fortunately, it didn’t, and I ended up with a nontraditional shakshuka-like dish that is freaking delicious. It’s super satisfying and makes amazing leftovers, and that’s about all I want in life right now.
- 1 lb. ground turkey*
- 1 T. extra virgin olive oil
- 1/2 white onion, chopped
- 8 oz. mushrooms, chopped
- 1 T. minced garlic
- 1 14-oz. can fire-roasted diced tomatoes
- 1 14-oz. can diced tomatoes
- 1/4 t. salt
- 1 t. cumin
- 1/2 t. basil
- 1/2 t. oregano
- 1 T. balsamic vinegar
- 4 large eggs
- Black pepper and crushed red pepper, to taste
- Preheat oven to 425°F.
- In a large oven-safe pan, cook turkey over medium heat. Remove to plate.
- In the same pan, heat olive oil over medium heat. Sauté onion, mushrooms, and garlic in heated oil.
- Add both cans of tomatoes and simmer for 2 minutes.
- Stir in salt, cumin, basil, oregano, and balsamic vinegar.
- In each of the four quadrants of the pan, crack one egg. Try to keep it fairly contained within its quadrant, but it's okay if it travels a little.
- Place the pan in the oven** and cook for 10-15 minutes, until eggs are cooked to your liking.
- Serve in bowls and enjoy!
- *I used JennieO extra-lean. You could use any ground meat you like.
- **If you don't have an oven-safe pan, transfer meat and tomatoes to a large baking dish before cracking eggs.
- Leftovers keep well in the fridge for about 4 days. I put mine in individual Tupperware containers, and reheated in the microwave in about three increments of 45 seconds.

I”ve been wanting to make shakshuka forever. I love that you added ground turkey to it! I am a half and half person when it comes to meals and snacks. I tend to have snacks in the morning, and then meals in the afternoon. And by meals, I mean 4 meals in the afternoon. Not kidding.

I love it. It’s so cool that you are making big, filling meals, and that they are helping you last longer from meal to meal. I definitely started snacking more after recovering from an ED, but I did notice that it is such a blessing to come away from a meal and not have to eat again soon cause of being really hungry. Big filling meals really hit the spot.

I’m not a huge snacker typically…more of three (gloriously) large meals! I’m glad you’re enjoying the Whole 30. I never thought I’d say, “I’m out of zucchini…I need more ASAP.” But now I eat like 5 a week…

I know we’ve both said this already but yes to less snacks! But I feel you… I was like a 6 small meals a day person with maybe even more snacks here and there depending on the day. But I am really aiming to eat enough for three main meals and usually it’s still one snack. 🙂
Yeah, I’m still at three meals and generally two snacks, but I’m not eating constantly, which I totally was before!
You’ve made this to perfection!!! I also have a tough time with the snacking thing – I’m always home so I’m always snacking. Whole30 really gives me the conscious to ask myself, “are you really hungry or snacking out of boredom”, which is sooooo good for me!
