Happy Friday! I’m going to keep this short and sweet because, as you know from yesterday, I’m playing some serious catch-up in class right now. So, I hope you’ve had a fabulous week and are looking forward to an even better weekend. Let’s kick it off on a good note by looking back at some of our favorite things from the week. Sound good? Let’s do it.
Yoga teacher training
I was crazy stressed on Tuesday night when I left for teacher training because I was afraid of being unprepared for my econ class in the morning. (Truthfully, I wouldn’t have ever felt prepared.) As soon as I got to class and started talking to new people, I stopped worrying and started enjoying myself. The thought of putting myself “out there” is almost always significantly more daunting than actually doing it.
Also, we got bundtinis from Nothing Bundt Cakes, and that’s always a good idea.
My new class
I officially registered for Intro to Comparative Politics yesterday, so I’m obviously behind. It’s almost the end of the third week of the quarter, and I’ve only done this week’s reading. However, I loved it and thought it was incredibly interesting, so I’m actually looking forward to catching up on the rest. It’s not an econ class, but it has a lot of the concepts we learn in econ applied to politics, so it’s cool to get a different perspective. Plus, I’ve always been interested in politics. So, I’m a little stressed, but I made a good choice.
RX Bars
Getting mail is always fun. Getting food in the mail is even better. Yesterday, the lovely people at RX Bar sent me three boxes of bars, including a box of each of my favorites (Chocolate Sea Salt and Maple Sea Salt) and a variety pack. I love RX Bars because they have super simple ingredients and quite a bit of protein and they taste great. I like the salted or spiced ones best (oh, and the Peanut Butter!) because otherwise I do think you get a lot of date taste and not much else, but I do enjoy them all.
Family weekend
Hmm. Not a favorite from the week so much as my favorite anticipation from the week, but my parents are coming today and staying until I leave for yoga teacher training on Sunday. Yay family time! Also, this is UChicago’s Family Weekend, and my parents have never been here for it. My grandparents came during my first year, and last year, my parents timed their visit the week after to avoid the craziness. Other than the fact that I’m working a shift playing with little kids (siblings) late Saturday morning as part of my O-Aide responsibilities, we’ll actually probably avoid the festivities and just hang out, shop, study, and watch sports, but I’m totally okay with that. I get to see my people!
Simple Mills Pancake & Waffle Mix
I’ve shifted to a mostly-kinda-Paleo-ish style of eating, but I do still find that grains aren’t always my body’s BFF. Simple Mills is awesome and makes tons of grain-free/Paleo baking mixes and other convenience products (you might’ve seen their crackers on my Instagram stories). Yes, I am perfectly capable of making pancakes from scratch, but sometimes convenience wins. I made these pancakes for a mid-afternoon snack yesterday and it was a great decision. They’re a little sweet and they manage to taste buttery with no dairy at all. I’m a fan.

Oh I do love RX bars and how simple their ingredients are. And yay for a parents visit, mine just visited last weekend. It’s so nice to be able to take them around a day in your life.

The Rx bars sound awesome! I am a big Lara bar fan so I think they’d be great–the extra protein is a plus, too.

I think you’d like RX bars then! They’re a little less nutty than Larabars, but otherwise very similar!
I go the pancake mix route sometimes too; it can be so convenient to get a quick breakfast. The people at RX bar were so sweet to send you so many bars; I’m glad you have some really good study fuel.

I have only tried the chocolate sea salt RxBar, but I was a big fan! I love the flavor and nutritional profile. I think it is way cool that you are doing yoga teacher training, go after your goals!

Congrats on starting yoga teacher training; I love core power yoga and have gone to several of their studios in California and Colorado. As for me this week, I’m loving spaghetti squash, movie nights with friends and netflix!
