Happy weekend! Did you have a good week? Especially for being my first week of midterms, mine was actually pretty alright. Next week will be a little tougher, but then I’m “free” after next Sunday. So, you can probably guess that my weekend will be one full of mostly work, but it’s all good. I’d love to hear about your exciting plans, though! But before we head into the weekend, let’s look at some of the best things from the week.
- Apple nachos
I’ve seen this idea floating on the internet for ages, but guys, it’s SUCH a good snack. Apples drizzled with nut butter (I went almond this time), and sprinkled it with granola and chopped salted dark chocolate. This was delicious and I see many variations in my future.
I picked these up at Paper Source over spring break, and my aunt actually saw them, thought of me, and sent them to me in a care package.
They’re cute and funny and definitely a good way to feel a little better about life. We could all use that sometimes, yeah?
- My cousins’ drawings
Also a part of that care package my aunt sent? These adorable drawings from my cousins. Sure, the candy and nut butter in the box are awesome and I will definitely enjoy those, the drawings are my favorite part. I love these kids and their art absolutely brightened my day.
I don’t wear nail polish on my fingers because it chips too quickly and then the perfectionist in me just can’t take it, and I have to take it off immediately. However, this is super sheer and sparkly, so it’s hard to tell when it chips a little. I’ve discovered this week that having painted nails makes me feel like I have my life together a little more, which is always a good thing.
Oops, two weeks in a row of Arman recipes. Oops. But they’re so good. This was lunch after my econ midterm on Thursday. Double-chocolate pancakes topped with strawberries and a little maple syrup? Yes, please.
And that’s all for me this week! I’m going to go to office hours today, hopefully do some yoga, and studystudystudy for econometrics. Have a great weekend!
Favorite nacho toppings?
What are you loving this week?
Do you have any plans for this weekend?

Yes! I hope you love it!
Arman is a recipe genius. He is great for actually taking all the stuff we throw in a bowl, measuring it out and calling it a recipe. My favorite nacho topping is guacamole, but I could just eat all the chips. I love the crunch and salt. I love the Harry Potter drawings, what a great artist
Guacamole is amazing. Great for nachos and everything else 😀
I feel as though apple nachos are just not my thing! Haha! I need to slice and spread, it’s an art!!! I have to get the perfect ratio of apple to nut butter 😉
Confession: I had some extra almond butter on the side to make it all a little more perfect 😉 I get where you’re coming from!
For regular nachos–chorizo. For irregular nachos–blueberries. Totally unexpected.
OMG I haven’t had chorizo in forever! But it’s so good ? Ooooh blueberries? I like the way you think.
Okay, I totally need to make apple nachos- how fun and delicious! I really like that pink OPI too, my nails are naked right now so I need some inspiration.
Hahaha my nails are usually naked but I’m liking the change 🙂
Okay, those apple nachos actually look like art.. and you also get 10 points for using chocolate CHUNKS instead of chips 😀
I actually love ground beef on nachos- My mum makes these awesome ones with it! This weekend…well, brunch tomorrow and then some work later in the day. Don’t study TOO hard. 🙂
10 points to Gryffindor 😀 And OF COURSE! Chunks are such a good choice.
And my family was the family that threw tortilla chips, ground beef, cheese, and topping on a baking sheet, baked it for a bit, and called it dinner. Ground beef is great 🙂
Umm… your apple nachos look insanely good. SO MANY AWESOME INGREDIENTS! <3
This week I am loving all the nuts and nut butters AND all the apples – so that just means I have to make apple nachos right!?
Thanks, Kristy! And nuts and nut butter and apples are always faves in my book. 😀 Apple nachos sound perfect for you!
Those apple nachos look AMAZING!!! Have a lovely week <3

Thanks, Edye 🙂 Happy Monday!
Good luck on your finals this week. Tomorrow is my last one, thank the Lord.
Your apple nachos look freaking amazing- making those asap!
Jealous that yours are finals, because mine are midterms! 😉 Also that you’re done for good! Congrats, Kate!
Those apple nachos are such a cute idea! Give me a little caramel drizzle over green apples and I’m in heaven!
Ahhh I LOVE that sweet and tangy combo! Apple nachos sound right up your alley!

Oh my gosh I TOTALLY relate to the fingernail polish thing. As horrible as I know acrylics are for my nails, I finally bit the bullet and started getting them just cause looking down and seeing them all long and elegant literally makes my day better. And like I have it together hahah
I’ve never done acrylics, but I had a gel manicure once and it lasted for three weeks, even though I spend a ton of time baking/cooking/washing my hands during that time period. It was so great! Expensive-ish, but great 😉
