Happy Friday! How was your week? I haven’t gotten as much sleep as I should have (see: Netflix addiction), but it’s been a pretty lovely one on my end. Lots of rest and checking things off my to-do list. Good stuff. And I’m quite ready for a fun weekend. Before we get to that, what do you say we look back at some of our favorites from the week? Let’s do it.
True Food Kitchen
This is one of the places I’ve wanted to go, so after my run, I headed to True Food Kitchen for an egg sandwich. It was sooo good. So good. It was two eggs, Manchego cheese, tons of turkey, avocado, lettuce, and tomato on what is easily some of the best bread I’ve had on a sandwich. And the little kale salad it came with was so well dressed and seasoned. Also, it was a gorgeous day, so the doors were open and you could feel the breeze and the sun. THE BEST.
Stretching
As you know, I get super tight, and when I was running a lot I was good about foam rolling afterward, but I’ve been slacking. I saw Beverley’s post and decided to start following her basic stretching routine. It feels so good! Do it. It only takes 6 minutes!
Simple Mills Cookies
I am all for soft, chewy cookies for dessert. They are my love language, and the only kind of cookies I ever want to make. However, if I just want a sweet-but-not-too-sweet snack after lunch, these little crunchy cookies are perfect. They’re more like a snack than a dessert, if that makes sense. The chocolate chip ones taste like (better) Famous Amos cookies, and the double chocolate ones are just… double chocolatey. How do you go wrong? Plus, they’re made with super simple, good-for-you ingredients. Win.
Avocado + salt + red pepper
This is my new favorite snack/meal component, and also how I’ve been going through 2 avocados a day. Also, if red pepper is too spicy for you, it’s dampened a lot by the creamy avocado. I pile on tons post-picture because I like the spice, though.
A weekend with my mom
GUYS. My mom is coming to town to see me! This all hinged on the Blue Jackets’ playoff schedule, because my parents have tickets to Game 3. If Game 3 had been tonight or tomorrow, she wouldn’t have come, and it’s why she’s leaving super early on Sunday morning. Still. Thanks, hockey schedulers. And we’re gonna go explore and eat and shop and hang out. Follow our adventures on Instagram stories – or check back next week. I’m sure I’ll tell ya all about it. It’s gonna be the best.

True Food Kitchen sandwiches sound DREAMY; wow Ellen; that is the perfect sandwich.
Also I think I like soft cookies the best, but sometimes dipping a crunchy cookie in milk is the best too.
I used to dip Oreos in milk all the time as a kid! So satisfying.
I LOVE crunchy cookies, usually because I’m having them with something creamy (like a smoothie bowl or yogurt). And you def need to try True Food’s bison burger AND their guacamole dip (I had it with veggies instead of chips and it was bomb). And I love avocado on everything, honestly, but I think it’s especially good on spaghetti squash and veggie pizza!
OMG one of the best accidental genius moment was when an old teacher of mine shipped me some crunchier cookies that totally crumbled while in the mail, and they came to me in a mix of big chunks and crumbs. Somebody would have to pay something for “cookie granola” to top ice cream and yogurt with, right?
I’ve been hearing a lot about the Simple Mills cookies and think I need to try them… we love their muffin mixes! I generally like soft cookies better but crunchy cookies remind me of being a little kid and all the Oreos and Milano cookies I used to eat. 😀
It sounds like you’ve got a super fun weekend ahead of you! My sister is visiting from school today and tomorrow we’re all headed to my grandparents’ country club for Easter brunch. 🙂
I totally forgot about Milano cookies! I used to eat those all the time. And Oreos, but how could I forget Oreos? 😉
