Happy Friday! How has your week been? I’m sorry we haven’t talked since Tuesday – this week has been a complete whirlwind and as slowly as parts of it went, it’s hard to believe it’s already over. That’s certainly not a bad thing, though. 🙂 Anyway, the weekend sounds pretty lovely right now, but let’s kick it off right by looking back at some of the best things from the past week!
- Midterms are over!
‘Nough said. That’s why the week was crazy, and that’s why I’m writing this at 10:30 pm on Thursday when my bedtime is actually like 20 minutes ago. That’s what late exams do to ya. Anyway, I’ve got about two and a half weeks “off” until finals and I’m so excited. Remind me I said that when I’m still working hard over the next couple weeks. 😛
- Post-Its
My wall is covered in Post-Its right now because that’s my method for getting thoughts and to-dos out of my head while studying. They saved my sanity during my last-minute cramming attempts yesterday. If it’s written down, I don’t have to remember it, but I won’t forget it. Make sense?
- This meal (and especially roasted potatoes)
I know, this meal is very brownish. But it was delish. Okay, sorry for the fake rhyme. Really, though! I’m queen of sweet potatoes and eat at least one almost every day. But Amanda got me craving regular potatoes last week, so I made sure to buy them this weekend. On Tuesday, I roasted them so I’d have them whenever I felt like it this week. I’ve had them with mahi mahi burgers and ketchup and also with stuffed shells (which were okay, but not amazing). And on Wednesday night, I cooked mushrooms, onions, and salmon in butter, white wine, and basil and had that with the potatoes. It was wonderful.
- 50° in February
It’s supposed to be in the 40s and 50s this weekend. It’s Chicago in February. It’s weird. It’s also beautiful. Not complaining one bit.

A good way to reward yourself after an icky midterm is to pick up a package full of delicious food. My giveaway winnings arrived yesterday! I can’t wait to play with the CocoCardio and coconut flour! And of course, half of my package was nut butter because it’s the best. I’m a happy girl.

I’ve still never had “mid terms” in any college class….ever….haha! We have spring break in 2 weeks though! Wooo!

I do like potatoes! It’s kind of funny that we call white potatoes just “potatoes” but orange and purple potatoes “sweet potatoes” and “purple potatoes” 🙂 I love mashed potatoes the next day when I make potato pancakes out of them. I also LOVE latkes. I think I should have been Jewish.

Latkes are a Jewish food. Basically you shred potatoes and then form them into patties and fry them 🙂

That recipe sounds so simple but delicious! I’m with you on potatoes, but I need to incorporate them more into my dishes. I love them best when they’re crispy on the outside but soft and mushy in the inside. I should start using post-its too! I’ve got too many things to remember but not enough room in my head lol
Same on the potato prep! I need the outsides to be crispy and I’m not really a fan of mashed potatoes, but the creamy inside totally gets me 🙂
Favorite form of potatoes: hash browns! I wish they were more prevalent in my life.!

Yay for midterms being over! I feel like you can never go wrong with potatoes, however, I’m not so much a fan of mashed potatoes. Any other kind of potato I’m well and truly on board with 😛
Same with mashed potatoes! They’re just not my favorite.
