When I was in sixth grade, the place to be on Friday nights was the local ice rink. “Friday Night Meltdown” was a big deal, and people would go and hang out with friends and eat stadium snacks and listen to top-40 hits. Was ice skating cool where you were in middle school? Is it a Midwestern thing? Is it an Ohio thing? Tell me!
Anyway, you’ll notice I am not saying that I did this. I do actually think I went once. However, I can’t skate and I didn’t find it fun. It was loud and you couldn’t talk much and there was drama.
I love that my friends have always been pretty laid-back. When we hung out, we usually went to the mall or a movie and headed back to one of our houses to chat and watch TV. And eat snacks. (Spoiler: everything on this blog comes back to snacks. ?)
I remember that on one of those middle school evenings my friend, Hayley, and I fully intended to have a health(ier) snack. Her mom had washed a bunch of strawberries and they were sitting in a colander in the sink, so we decided to melt some chocolate and have ta-da chocolate-covered strawberries. I know that we don’t sound terribly creative; chocolate-covered strawberries are pretty standard. Just wait.
Well, those strawberries disappeared pretty quickly – and so did some of the bananas on the counter and other berries in the fridge. Grapes may have gotten involved. The two of us stood at the counter chatting, melting more chocolate, and raiding the cabinets for more dippers. In the end, we ended up using the aforementioned fruit, pretzels, graham crackers, Oreos, and Goldfish. I expect a stomachache followed, but the fun was totally worth it.*
See, we were testing a theory: everything is better covered in chocolate. Admittedly, we didn’t try anything too crazy to disprove this theory, but we aren’t real scientists. 😛
And all these years later, that theory still holds pretty true for me. I mean, I’m not saying chocolate-covered pasta is an awesome idea, but within reason, come on. Chocolate is pretty great.
Also great? Fluffy (raspberry-studded) donuts. And, frankly, I figured they’d be pretty great together.
I was right. The light, cake-y donut contrasts perfectly with the creamy coating. See, this isn’t gooey “chocolate frosting”. It’s pretty much just soft, slightly melty chocolate – and it’s wonderful. The tart raspberries pop just enough against the sweet cocoa. Chocolate-covered raspberry donuts are a delicious mouthful.
So this Valentine’s Day, when everyone is gifting chocolate-covered truffles and pretzels and strawberries… maybe consider some chocolate-covered Goldfish raspberry donuts.
- 1 c. all purpose flour
- 1 t. baking powder
- 1/4 t. baking soda
- 1/8 t. nutmeg
- 1/8 t. cinnamon
- 2 T. coconut oil, melted
- 1 large egg
- 1/3 c. granulated sugar
- 1/4 c. milk
- 1/4 c. Greek yogurt
- 2 t. vanilla extract
- 1/2 c. raspberries, chopped
- 1/4 c. semisweet chocolate chips
- 1 T. coconut oil
- Preheat the oven to 350°.
- Spray a donut pan (I used a mini donut pan) with nonstick spray. Set aside.
- In a large bowl, toss together the flour, baking powder, baking soda, nutmeg, and cinnamon together.
- In a small bowl, whisk the coconut oil, egg, sugar, milk, Greek yogurt, and vanilla until smooth.
- Pour wet ingredients into dry ingredients and stir gently until fully combined.
- Fold raspberries into the donut batter. It's completely okay if they break! They may tint your donuts a little pink, but that's just pretty.
- Pour the batter into a Ziploc or piping bag*, snip off the corner, and carefully pipe into the prepared donut pan. if you have two donut pans, go ahead and bake all the donuts at once. Otherwise, set aside the leftover batter and put the first tray in the oven. Bake for 6 to 8 minutes.
- Allow to cool fully before dipping in chocolate coating.
- Place chocolate chips and coconut oil in a microwave safe bowl.
- Microwave for 30-second intervals, stirring between, until fully combined.
- Dip donuts into chocolate coating and allow to set. (They set faster when refrigerated.)
- Devour!
- *This is why you want to chop your raspberries! Make sure they're small enough to fit through the hole you cut. Also, using a cup to hold the bag while you pour is helpful.

I like dipping salty things in chocolate like pretzels or chips. Salty sweet is my kryptonite:-) the thing to do when I was in middle school were the dances my teacher would hold. Some were more fun than others, but it was always cool to go.

I love ice-skating but don’t get the chance to go too frequently as I live quite far away from the nearest rink. Our thing in middle school was a splash night at our local pool where they opened up the slides and would put out loads of inflatable platforms to play on.

Dang, I WISH ice skating was a thing in my childhood. I took lessons for a year but it was never a big deal around Los Angeles! That should change because I was obsessed with watching it during the olympics.

Whoah, those look absolutely delicious! I have to say that my favorite things to mix with chocolate are caramel and peanut butter. 🙂 As for middle school, it is far now, but my daughter and her friends spend most of their time playing sports, which I think is the best way to use your early teen energy.

Ohhh man, these look so good! I also love the little story that came with this recipe, I have to agree, everything is better with chocolate! And honestly… Would pasta and chocolate really be that bad? Because I don’t know, pasta is quite bland, I think chocolate could actually work with it!!?!?
